“The Schlachterei Bätzel butcher’s shop is a fantastic place,” says Norman Pontzen, head chef of the Neues CAPITOL restaurant. Master butcher Jens Bätzel from Wunderthausen is one of the regional suppliers providing the Neues CAPITOL with high-quality products.

Fresh sausages and cold cuts are served at the breakfast buffet, while dinner guests can enjoy specialties such as pork chops or venison sausages. “The products do not come from factory farming or industrial meat production, but from a traditional craft business,” Pontzen explains.

Since 1997, Jens Bätzel has been running the butcher’s shop in Wunderthausen. In the specialist store, which offers a wide selection of fresh meat and sausage products, his wife Anja personally takes care of the customers. The business itself was founded by Jens Bätzel’s father in 1973 as a slaughtering service operation. Today, it is the last remaining shop in the village. Loyal customers come from surrounding towns and villages, from Bad Berleburg to Hallenberg.

“To achieve the highest possible level of freshness and quality for our meat and sausage products, we slaughter our livestock in-house,” emphasizes Jens Bätzel. The cattle and pigs come from nearby farms that focus on animal welfare and responsible farming practices. “We also offer our expertise as contract butchers to farmers and livestock owners in the region,” Bätzel adds.

“We produce our homemade meat and sausage specialties ourselves using traditional recipes,” says Anja Bätzel. Delicious cold cuts, marinated barbecue meats, crispy sausages, and much more are part of the range. On the first weekend of every month (Fridays from 5:00 pm to 7:00 pm and Saturdays from 11:00 am to 1:00 pm), Anja and Jens Bätzel offer popular snack specialties including burgers, currywurst, bratwurst, and Danish curry sausage served with fries. The offer is highly appreciated by customers from the village and the surrounding area. In addition, the business also provides party service and catering.

For the perfect recipes, Norman Pontzen and Jens Bätzel work closely together. One excellent example is the spice blend used for the venison sausage. It is a commitment to quality that guests at the Neues CAPITOL restaurant truly appreciate.
